There was an approximate 50% increase in the intake of refined carbohydrates in the Alaskan Inland Inuit from 1955 to 1957 to 1965. This may have lead to the dramatic rise in dental caries and subsequent increase in athero- sclerosis and coronary artery disease.1 4 The Alaskan Inuit eating a traditional low-carbohydrate, high-fat/protein diet had a much lower incidence of atherosclerosis, hypertension and dental caries versus more westernised populations.
